Griotte is the French name for the sour or Morello cherry, the tart-fleshed fruit of Prunus cerasus, a small tree cultivated across Europe and Western Asia. Unlike sweet dessert cherries, griottes are deeply red, juicy, and bracingly acidic, long associated with kirsch and brandied-cherry preparations.

Its aroma is rich and unmistakably cherry: ripe, jammy, and red-fruited, edged with a sour, mouth-watering tang and a faintly boozy, liqueur-like warmth. Beneath the fruit lies an almond-like kernel facet, slightly bitter and nutty, that lends depth and a touch of marzipan sweetness.
