Maple syrup is made from the xylem sap of sugar maple, red maple, or black maple. These trees store starch in their trunks and roots, before winter arrives, and this starch is transformed into a sweet sap that rises in the spring. Syrup is collected by drilling holes in tree trunks and collecting sap. The sap is liquid in consistency but becomes syrupy after being treated by heating to evaporate excess water. Maple syrup is eaten with pancakes, French toast, oatmeal, waffles and porridge. It is also used as a flavoring agent or as a cooking ingredient.
