Quince is the hard, golden fruit of Cydonia oblonga, a small tree of the rose family related to the apple and pear, with origins in the Caucasus and western Asia. Too astringent to eat raw, it grows intensely fragrant as it ripens or cooks; because the fresh fruit yields little oil, its scent in perfumery is most often reconstructed from aroma materials.
