Shiso is the aromatic leaf of Perilla frutescens, a herb of the mint family long cultivated across East Asia and especially associated with Japanese cuisine. Both green and red-purple varieties are grown, and the fragrant essential oil is drawn from the leaves and flowering tops by steam distillation.
