Cinnamon is the aromatic inner bark of evergreen trees of the genus Cinnamomum, most often true or Ceylon cinnamon (Cinnamomum verum) and the bolder cassia (Cinnamomum cassia). The bark is peeled, dried into curling quills, and steam-distilled to yield an oil whose warmth owes much to cinnamaldehyde; a softer oil is also drawn from the leaves.

Its scent is warm, sweet, and unmistakably spicy, with a dry, woody facet and a biting, almost fiery edge. Bark grades feel rounder and balsamic, while leaf material leans sharper and more clove-like, lending a glowing heat that radiates on the skin.

In perfumery, cinnamon is a pillar of the spicy and oriental families, working chiefly through the heart into the base to add richness and warmth. It pairs naturally with vanilla, clove, and tonka, and brings a festive lift to citruses, ambers, roses, and resinous woods.
